Swedish Meatballs

Every Scandinavian person learns about and eats little meatballs!

Ingredients:

1 tablespoon onions, finely chopped
3 tablespoons or more of butter for frying , as needed
1/3 cup bread crumbs
1 cup water and cream mix (1/2 cup of each)
3/4 cup pound ground beef
1/4 cup pound ground pork
1 1/4 teaspoon white pepper
1/2 teaspoon sugar
1 tablespoon butter

Servings: 4

Saute onions in butter until brown.

Soak bread crumbs in water and cream mix. Add beef, pork, onions and seasonings to mix. Add beef, pork, onions and seasonings to mix. Mix gently with hands (or spoon) until smooth. Shape into small balls (can use hands or small tablespoons dipped in cold water).

Fry in butter, shaking pan continuously to make balls round. Do not be discouraged if first ones fall apart. It takes a few minutes to get the hang of it.

Serve hot or cold with ligonberries as a smorgasbord dish.

Can also be served in a dark gravy as a main course, but I prefer them without gravy.
